Portobello Mushroom Bowl

This one is really easy, fast, and tasty.

1 Portobello mushroom
Uncle Bens (long grained wild rice)
Olive oil

Preheat over to 400 degrees. Cut stem off mushroom, discard, poke holes in the center of the mushroom, and steam for 5 min. Prepare rice by the instructions with olive oil. Put 1-2 tbs olive oil in cap of mushroom try to spread evenly. Then fill the cap with the finished rice and place in oiled casserole dish and bake for 5 min. Serve and enjoy.

This makes one serving, but the total rice can fill up to 3 caps.

Optional: I sauted some some small diced veggies including red onions, garlic, and peppers and mixed it in the rice and it was delicious.
